The founders spent over twenty years in the United States of America; for several years as producers of California Extra-Virgin Olive Oil at the Critelli Olive Oil Company, but also in the restaurant and foodservice industry. As a Chef and later owner of the Vintage Café one of Solano County’s top Italian restaurants, Nicola Critelli and his wife Caroline decided to start an Italian company to serve the needs of Italian foodservice chains on the US west coast. In 2006, they founded Pegaso Alimentari Srl in Sarnico, near Bergamo. Pegaso recently relocated its headquarters to Capriolo, in the heart of Franciacorta, home of the sparkling wine of the same name, which earned the Denomination of Controlled and Guaranteed Origin (Docg), the highest recognition for a wine of quality and tradition.
